Rice was well-known during the Roman times, but only medicinally, and was not grown in a regular or widespread way in the Mediterranean until the rise of Islam. Traditionally, risotto was made with arborio rice, a rice known for its starchiness and slight al dente crunch. 1.On medium heat, saute garlic, and 1 tablespoon of butter together in the saucepan until aromatic.

2.Add in Thai jasmine rice and stir well. Saute for 1 minute. Add sliced mushroom and saute until softened, then add 1 cup of broth.

3.Cook until broth is almost completely absorbed, frequently stirring (the constant stirring will allow the rise to become starchy). Add in another cup of broth.

4.Repeat step (cook until broth is almost completely absorbed, stirring frequently). Add in the remaining cup of broth and repeat.

5.Once broth is almost completely absorbed, add in the wine.

6.Stir lightly for a minute and then remove from heat.

7.Add another 1 tablespoon of butter, cheese, and parsley. Stir well and place in a bowl

8.Garnish with basil and serve immediately.

Note : Be sure to constantly stir the rice to prevent sticking and to try to create the starchiness of arborio as much as possible!
