THAI CURRY PASTE

We all know that a mortar and pestle does a great job of crushing ingredients to produce a flavorful curry paste. But what if you don’t have one? A food processor or a blender can be an option, but when you only need something quickly blended, the thought of a big cleaning afterward might as well be a huge pain. A hand blender (or immersion blender), is by far a handy gadget to have in the kitchen for making smoothies, pureeing soups in a pot, or for small chores where a large blender would be an inconvenience. So why not use it to make curry paste? It can reduce a pile of fresh and dried aromatics into a smooth curry paste in just a couple of minutes! Just place all ingredients in a container, a bowl, or a pot, and blend until it forms a thick paste. Easy Peasy!

By contrast, making a curry paste 100% with a mortar and pestle is a much more laborious process that typically takes at least 5 to 10 minutes, yet produces the best curry paste with respect to consistency, aroma, taste, & shelf life. On the other hand, it’s much easier to get a smooth texture with a hand blender. You might, however, need to chop all ingredients a little more coarsely to make them easier to process.
