Oyster selection and storage

If you are an oyster lover, it is important to know how to select oysters and keep them fresh. Live oysters should be tightly clamped shut or will clamp shut when tapped, and has a mild scent of the sea. If you can sense a strong, offensive or pungent fishy smell, that means the oysters are off. If the selection is jarred oysters (or those that are in plastic containers), the liquid should be clear or slightly opalescent, and there should be no off odor. If the liquid becomes unclear, that means the oysters are spoiled – no matter how many times you change the liquid it will always get cloudy. Do not attempt to eat them as they could cause severe illness after consumption!

Raw shelled oysters can be washed in cold water and packed either in a mesh bag or in an open container covered with a damp cloth. And stored in the fridge for up to 5 days (although the flavor is best when they are consumed within 24 hours of purchase). Do not seal live oysters in an airtight container—they will not be able to breathe and will die.
Canned oysters will have an expiration date and should be refrigerated in their liquid in a covered container once opened.
