Fried noodle Thai style with prawns (Pad Thai with prawns)

Ingredients of fried noodle thai style
1.Royal Umbrella’s fine cut noodle 100 Grams
2.white leg prawns 5 Prawns
3.fresh egg 1 Egg
4.Yellow tofu, Diced 1/4 Cup
5.Sweet pickle turnip, Sliced 1 Tablespoon
6.Fried dried shrimp 1 Tablespoon
7.Grounded Thai garlic 1 Tablespoon
8.Shallots    , Sliced 1 Tablespoon
9.Roasted and grounded peanut 1 Tablespoon
10.Soybean oil for stir fried 3 Tablespoons

Ingredients of fried noodle thai style juice
1.Tamarind juice 4 Tablespoons
2.Lemon juice 2 Tablespoons
3.Coconut palm sugar 4 Tablespoons
4.Sugar 3 Tablespoons
5.Fish sauce 4 Tablespoons
6.Grounded dried chili 1 Teaspoon

1.Bring Royal Umbrella’s fine cut noodle put in a colander then sprinkle of warm water on top to bottom. Continue doing so until the noodle getting soft then put it aside.
2.Add all Ingredients of fried noodle thai style juice into pot slowly boil with low heat until it become sticky juice, during this process should stir all ingredients together should not use high heat or the juice will be bitter and burn.
3.Add oil into frying pan with low heat, and then add Shallots, Thai garlic stir fried until fragrant. Then added more yellow tofu, dried shrimp, and sweet pickle turnip continue stir fry until it mixed together.
4.Add white leg prawns into frying pan, stir fry until prawns cooked and then added fine cut noodle and 1 ladle of fried noodle thai style juice. Make sure that noodle soaked with juice and try not to make noodle stick together, by the noodle color getting darker. After that take all ingredients out of frying pan.
5.Break the eggs into the pan and scramble add more ladle of fried noodle thai style juice mixed together with egg. Then add the noodle and of left over juice in to frying pan and stir with high heat.
6.Add more bean sprouts, chives leave and sprinkle of peanut, quick stir fry and turn off the heat.
Reminder: serve with slice of lemon, sugar, and grounded dried chili, so you can seasoning as you like. Can be eat with fresh vegetable such as banana blossom, chives and bean sprounts
