Cooking Rice in a Pot

pot2.gifUsing a pot is the traditional way to cook rice, but is slightly more complicated.

Directions for 3 cups of rice:
1. Wash the rice thoroughly and place it in a heavy, medium-size pot with a tight-fitting lid. Add cold water and swirl it around several times with your hand, then drain. Repeat until the water runs clear.
2. Add about 3.5 cups of cold water - enough to cover the rice.
3. Bring the water to a full boil, remove the lid, and leave to boil for about 15 seconds.
4. Cover tightly, reduce the heat to the lowest possible, and cook without lifting the lid for 15 minutes.
5. Remove the pot from the heat and let it stand - still covered - for another 5 minutes.
6. When you take off the lid, you will see the grains of rice standing up on the top layer. Turn the rice gently with a rice paddle, then replace the lid to keep it warm. The rice is best served within 1 hour of cooking.
